Abstract
Chronic pancreatitis (CP) is a fibro-inflammatory syndrome. This study hypothesized that a soy-tomato enriched diet could reduce inflammation and CP severity. C57BL/6 mice with caerulein-induced CP were fed either a control or soy-tomato diet for two weeks. The soy-tomato diet significantly reduced inflammation and CP severity (p=0.032), improving serum lipase and amylase levels (p<0.05), and reducing inflammatory factors (TNF-α, IL-1β, IL-5) and MDSCs (p<0.05). Infrared sensing showed improved activity and health in soy-tomato fed mice. These results suggest a soy-tomato enriched diet may be a novel treatment for CP.
