Abstract
This study validates a liquid chromatography-tandem mass spectrometry (LC-MS/MS) method for simultaneously quantifying over 700 mycotoxins and other secondary metabolites in pasta, biscuits, crackers, and muesli. A "dilute and shoot" approach showed minimal matrix effects (7-14% of analytes significantly affected) and good extraction recoveries (92-94% within the 70-120% target range). Repeatability and intermediate precision met the <20% criterion for most analytes. Analysis of 157 European samples revealed frequent enniatin and deoxynivalenol presence, with only a few exceeding ergot alkaloid limits.
