Abstract
This study introduces a novel technique for culturing and aligning muscle cells using plant-based zein-alginate fibers (ZA fibers) for cultivated meat production. ZA fibers, fabricated by coating zein protein onto alginate fibers, exhibit excellent cell compatibility, biodegradability, and high strain rates. The study demonstrates successful mature and aligned myotube formation in ZA fibers, and the assembly of muscle, fat, and vessel fibers to create a cultivated meat product with a texture resembling real meat.
