This study optimized a non-thermal atmospheric plasma (NTAP) system for continuous-flow apple juice (AJ) treatment. The effects of various parameters (discharge current, flow rate, electrode distance) on AJ properties were investigated using design of experiments and response surface methodology. NTAP treatment increased the concentration of several minerals (Ca, Fe, K, Mg, Na, Sr, Al, B, Ba, Cu, Mn, Zn) and total phenolic content, while extending shelf life. Importantly, NTAP treatment did not alter the structure of organic compounds, °Brix value, color, or ferric ion reducing antioxidant power. Furthermore, the treated AJ showed no cytotoxicity towards non-malignant human cells but exhibited induced cytotoxicity in human colorectal adenocarcinoma cells, suggesting potential antitumor activity.
