Post-harvest handling can affect micronutrient retention in biofortified crops. This systematic review analyzes 67 articles examining micronutrient retention in biofortified maize, sweet potato, cassava, pearl millet, rice, beans, and wheat. Provitamin A crops maintain high levels compared to non-biofortified counterparts. Iron and zinc retention varies depending on processing; whole grains maximize micronutrient content. The study suggests best practices for preparing crops to maximize micronutrient content and highlights gaps in the literature. An interactive Micronutrient Retention Dashboard is provided.
