Increased demand for hops due to the global brewery sector expansion raises concerns about climate change impacts on hop yield and aroma. This study combines meteorological data and model projections to assess climate sensitivity of European hop production (1970-2050), considering temperature increases and precipitation decreases. Results from Germany, Czech Republic, and Slovenia show earlier hop ripening, declining production, and reduced alpha content. Projections predict significant yield and alpha content declines by 2050, necessitating urgent adaptation measures to stabilize the global hop sector.
