Abstract
This randomized partial crossover clinical trial investigated the acute effects of egg consumption, with or without saturated fat, on glucose disposal in healthy adults. 48 participants (consuming ≥ 1 egg/week) received two of four isocaloric, macronutrient-matched breakfasts: eggs (EB); saturated fat (SB); eggs and saturated fat (ES); and a control cereal-based breakfast (CB). No significant differences in glucose or insulin AUC were found between EB, SB, ES, and CB. Acutely, egg breakfasts with or without saturated fat did not adversely affect glucose disposal in healthy adults, suggesting the need for long-term studies.
